Hoods fail inspections, rust out in salt air, or simply cannot keep up with a new menu. Replacement is not a parts swap. It is a permitted mechanical job with a health department shadow.
Order, then talk about dates
Stainless hoods and fans are long-lead, then they sit on a barge. We do not pick a cutover night until the crate has a sailing.
Makeup air is half the system. Replacing the hood and keeping the anemic fan is how you fail the next test.
- Temp cooking. A legal temporary setup or a short close. Pick one on paper.
- Fire suppression. The new hood and the ansul have to match. That is its own sub.
- DOH. Tell them. Surprises at the final are expensive.
Night cutover
We have done cutovers after last seating with a breakfast open that actually opened. That only happens with a rehearsal of the mechanical sequence, not heroics at 2 a.m.
JD Pacific Hawaii will not promise a 10-day hood. We will promise a date that includes the ocean.
Menus change in a week. Hoods do not.
