  • Kitchen equipment. Long-lead items like hoods, walk-ins, and specialty cooking equipment should be ordered before demolition starts. Equipment that arrives late stalls everything behind it.
  • Health department and permitting. Changes to your kitchen, seating count, or plumbing usually trigger review. Build that timeline into your schedule rather than discovering it mid-project.
  • Grease, gas, and ventilation. These systems drive both cost and inspection. Sizing them for your future menu now avoids a second renovation later.
  • Outdoor dining details. On Maui, patio expansions need to account for sun, wind, and rain. Shade structures and drainage are not afterthoughts.
